Where my family also produce dry cured black olives for the table, exactly as they have been prepared for centuries, where we produce chakistes from green olives, these are cracked and left in water which is changed daily for a week or so and then marinated with cracked dry corriander seeds,crushed cloves of garlic and small slices of lemon and then served with olive oil

where we produce sucuk, made from the juice of white grapes heated up over a log fire with flour and aniseed, and then strings of dried almonds are dipped into it on numerous occasions until it builds up to the diamater of a sausage and then it is hung to dry (as per this picture)
Where my family also produce zivania from our own white grapes, this is very similar to grappa and it is only used for medicinal purposes? as well as for family get togethers, we would normally serve it with dried fruits, sliced sucuk and nuts and raisins

I have produced this website in order that people can log in and see the olive groves etc where one of the worlds best olive oil is produced as well as the people that look after the trees and produce the extra virgin olive oil and olives
please note that everything we produce whether it be in Cyprus or in Turkey is strictly produced to organic standards, although due to cost we do not have certification we do have a certificate issued by the company that supplies us stating that everything we use and have used to treat the trees and fruit, ever since i took over is to organic standards i have put my name on it
